ไข่พะโล้ – Stew Eggs & Pork Belly with 5 Oriental Spices.
Ingredients (for big family)
You can proportionally reduce or increase for the portion your need
12 hard boiled eggs / peeled
1 Kg pork belly
5 cilantro roots
10 cloves garlic
1 teaspoon pepper
6 tablespoons coconut sugar
6 tablespoons soysauce
3 star anises (1 if pound or crush)
3 cinnamon sticks
1 tablespoon vegetable oil
6 cups water
How to prepare
1. Make hard boiled eggs and peel
2. Thoroughly pound cilantro root, garlic and pepper
3. Heat the oil and stir fry the pounded spices until getting the best aroma
4. Add a cup of water and sugar. Stir fry together until the sugar caramelized.
5. Add the pork belly and stir fry until cook and nicely brown.
6. Add the eggs and water, followed by cinnamon and star anises.
7. Add soysauce and simmer with low-medium heat for 1-2 hour
8. Garnish with chopped cilantro for serving.
